Recipes and Ladin and Tyrolean specialities

Ladin cuisine just like South Tyrolean cuisine is still based on a culinary culture that is strongly influenced by the territory. From simple products from the local ground, specialities have been born that are appreciated internationally which today are perfectly compatible with the refinement and the lightness of Italian cuisine.

Spinach ravioli from South Tyrol

Prepare the dough with rye flour and white flour, eggs, oil, salt and water. Let it rest for 30 minutes. Wash the spinach and cook it with very little water with a lid on, drain and chop finely. Then sauté onions and garlic with a bit of butter and add the spinach at a warm temperature for a few minutes. Next add in the curd cheese and chives and season to taste with nutmeg, salt and pepper. Flatten the past into thin sheets and cut them into disc shapes which are then filled with the filling. Cook for about 4 minutes in salted water and serve them with melted butter, chives and parmesan.

Tutres Tirtlan ladin cuisine

A fried speciality from Ladin cuisine Make the dough with rye flour and wheat flour, eggs, salt and a bit of melted butter. The filling can be made with curd cheese and/or spinach or cabbage. For the spinach and curd filling sauté the spinach in a bit of butter and add salt and pepper, then add the curd cheese. Cut out discs from the dough and insert some of the filling, then cover with a second disc and press them together at the edges. Fry them in hot oil.

Apple strudel

Mix together 500g of flour, 250g of butter, 200g of sugar, 2 eggs, ½ packet of yeast for desserts, ½ packet of vanilla sugar and knead together so the dough is smooth. At this point peel the apples, cut them into slices and add lemon, rum, bread crumbs, raisins, pine nuts, cinnamon and sugar. Flatten the dough, insert the filling and close the dough well. Brush the surface with 1 egg and bake in the preheated oven at 170° for about 25-30 minutes. Serve with a sprinkle of powdered sugar.
